Lilah loves vegetables! Of course, she likes cookies, pies, and cakes too, but she knows that you have to eat a lot of healthy vegetables to be able to earn the privilege of a small dessert. When we cooked a beautiful bunch of beets from Sprouts Market, we wrapped the bulbs individually in foil to roast them, then separated the long red stems from the bright greens. Lilah surprised me when she said her favorite part was the crunchy stem--raw! But she also liked them when the stems were sauteed in a little olive oil for a couple of minutes, then the greens were cut into chiffonade, added to the saute pan, and seasoned with salt and pepper. Peeling the roasted beets made for red hands but that washed off. Adding all the parts to the whole made a beautiful and tasty dish!
