Lilah wasn't sure what a biscuit was exactly but once we made them she remembered that she had one before. But she didn't know that you could actually make them! So we made a little batch and served our leftover roasted chicken and roasted vegetables in a savory gravy. Chicken 'n Biscuits! And when we were finished with dinner we admired our newly loomed potholders.
Biscuit Recipe
Makes 6, plus one leftover from re-rolling that she topped with cinnamon sugar
1 cup AP flour
1/4 teaspoon salt
1 and a half teaspoons baking powder
3 tablespoons unsalted butter, cut into tiny bits
1/3 cup heavy cream or milk (we used cream because we had it)
Preheat oven to 425 degrees and line a baking tray with a sheet of parchment. Combine flour, salt, and baking powder into a bowl and stir with a whisk (or sift, if you have a sifter. We do not.) Add the tiny bits of butter to the dry ingredients and work into the flour until the butter is mixed in. Pour in the cream or milk and stir lightly to combine then place the dough on the counter and knead to form a smooth mass. Roll out the dough and cut it into biscuit shapes with a cutter--or the ring of a mason jar, which we had on hand. Bake for about 12 minutes or so, until the biscuits are golden brown on top and crusty on the bottom. Lilah mixed up some cinnamon sugar and thoroughly covered the last bits of dough with it to experiment with a sweet biscuit that she had for dessert. Shortcake season is coming up! We will remember this lesson.
