On Thursday, the teachers at the Boulder Journey Preschool helped out with a hands on cooking demo in the classroom. Teachers helped to keep the two groups of 13 and 12 five-year olds on task, some at the cutting table and some at the folding table. The students put together Apple Cheese Quesadillas and then sampled them--and all agreed they were delicious--and easy to make! It's fun to cook for yourself and your family.
Apple Quesadilla
Yield: 12 Quesadillas
Ingredients
12 7-in whole wheat tortillas
3 cups shredded low fat cheddar cheese
2 large apples, peeled, cored and sliced thinly
Directions
Lay out the tortillas
Sprinkle 2 tablespoons of cheese on half of each tortilla
Lay a few slices of apple on top of the cheese and top with 2 more tablespoons of cheese
Fold each tortilla in half and place them in a skillet or on a griddle
Cook for about 5 minutes per side or until cheese is melted and bubbly
